Sweet Potato Strips: An easy, satisfying side dish that tastes like it should be bad for you

Doesn’t get easier than these slice ‘n bake good-for-you sweet potato strips

If you’re getting bored with the usual broccoli, cauliflower, green been rotation and are looking for a new vegetable to spice up your routine, pick up a sweet potato. For less than a dollar you have a satisfying, filling, flavorful side dish with numerous health benefits. This recipe takes all of five minutes, if that. So listen closely:

Take one sweet potato to your cutting board. Stand it on an end and either remove the skin with a sharp knife (careful!) or use a handy peeler.

Once the skin is removed, cut it in half lengthwise. Then cut each half into three or four strips lengthwise.

Place the strips on a sheet pan. Drizzle them with olive oil, sprinkle salt and pepper to taste, and toss them around to evenly coat.

Pop them in an oven preheated to 375 degrees and bake for anywhere between 30-60 minutes, depending on the size of the strips. Take them out twenty minutes into baking to rotate them on the pan using a pair of tongs, just to make sure they bake evenly.

Voila! Thankfully these pack a mean punch of beta-carotene and all of the fabulous nutrients we get from orange vegetables like carrots, because they are sinfully addictive.
